Fall baking season is officially upon us! Here is a wrap-up of the fall recipes I’ve made so far.
4. Homemade Pumpkin Spice Latte



I decided to play around with the idea of making my own PSL, however I found that it wasn’t as sweet and flavorful as the famous PSLs from Starbucks. I’m sure that there is a large portion of the population that finds the PSL to be too sweet and artificial tasting, however, I discovered that I am not one of them! If you prefer a less sweet and more spiced version, you will probably enjoy this recipe, however there are a few recipes that I personally enjoyed more this season.
1/2 c dark brown sugar
1 c water
1/4 c pumpkin
1 tsp pumpkin pie spice
pinch of salt
splash of vanilla
Add all of the ingredients except for the vanilla to a pot and boil on medium heat until reduced by half. Remove from heat and strain out the pumpkin pulp using a sieve. Once slightly cooled, add a splash of vanilla and store the syrup in the fridge. Add to taste to coffees and lattes.
3. Homemade Cider Donuts



Despite being a lot of fun to make, these cider donuts didn’t have the quintessential cider donut flavor that can only be found in the gift shop at apple orchards. The apple flavor didn’t come through quite as strongly as I would have liked, however if you’re looking for more of a cinnamon sugar baked donut, this is the recipe for you!
2. Brown Butter Pumpkin Snickerdoodles



We are officially in top two territory! These pumpkin snickerdoodles were out of this world! I modified this recipe to suit my taste and added white chocolate, however next time I would try them without the white chocolate. It’s very difficult to make pumpkin cookies that are not cakey in texture, and these were super dense and chewy, almost fudgy. Here are the modifications I made to the original recipe, which I highly recommend! I also rolled them in plain sugar with just a tiny bit of cinnamon instead of the more heavily spiced mixture outlined in the original recipe.
1 c unsalted butter, browned and cooled
1 1/2 c dark brown sugar
1 egg yolk
2 tsp vanilla
1/3 c pumpkin
2 1/2 c flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp salt
1 tsp pumpkin pie spice
1 tsp cinnamon
Pumpkin Spice Muffins



This is my absolute favorite fall recipe that I make year after year! The pumpkin muffin itself is so moist and soft, with the perfect balance of sweet and spice. The crispy streusel topping adds delightful texture and the vanilla cream cheese glaze hits you with just the tiniest bit of tang. Everything about it is perfect, and you simply must make them yourself! Here is my recipe, which is a modified version of one I found online years ago.
Muffins:
2 c flour
2 tsp baking powder
1/2 tsp salt
1 1/2 tp cinnamon
1 1/2 tsp pumpkin pie spice
1 c white sugar
1/4 c dark brown sugar
1 stick melted unsalted butter
2 eggs
2 tsp vanilla
1 1/2 c pumpkin
Topping:
1/2 c flour
1/3 c white sugar
1/2 tsp cinnamon
3 tbs dark brown sugar
3 tbs melted butter
3 tbs quick cook oats
Glaze
4 oz cream cheese
4 tbs butter
1 c powdered sugar
1 tsp vanilla
pinch of salt
Bake at 400 for 15 minutes, then reduce the heat to 375 and bake for another 5-10 minutes.
